Gluten-Free Gingerbread Men (dairy free too!)

These gluten free gingerbread men cookies were a hit in our house! A really simple recipe to get the kids involved in, and they have so much fun rolling the dough and cutting the shapes. What can go wrong?! We didn’t ice these, so there’s no icing recipe here. Here’s a great resource for vegan icing options, a little bit of sugar on some healthy cookies never hurt anyone over Christmas! You can get the GF baking powder from Coles and Woolies in the baking aisle to make sure these gluten free gingerbread men are really gluten free!

INGREDIENTS

– 2.5 cups almond meal
– 1 tsp gluten-free baking powder
– 1/2 cup coconut sugar
– 1 tsp of all spice
– 1/2 tsp cinnamon
– 1 egg
– 1/4 cup of honey
– 1/4 cup coconut oil (melted)

Method

  1. Mix dry ingredients (almond meal, coconut sugar, baking powder and spices) in a bowl.
  2. Melt coconut oil and then add the honey and egg and mix.
  3. Add wet ingredients to dry and mix together. Add more coconut oil or honey if the mixture is too dry. You want it to form a big ball easily and all stick together.
  4. Cover mixture with glad wrap or pop in a container and leave in the fridge for 1 hour.
  5. Preheat oven to 150 degrees.
  6. After it’s chilled, roll it out to 1cm thick and cut your shapes.
  7. Lay on baking paper and place in the oven for 10-15 minutes. The browner they are, the crunchier they will be!
  8. We had these as is – without icing!
