Kid-Friendly Lunch Box Protein Waffles
How hard is packing a kid’s lunch box every day?! With my little one starting kindy this year, I’ve struggled to get protein options into her lunch box. Protein is important in their day as it will help keep them feeling full and more satisfied, especially when they’re running around. Protein is also really important for their growth and protein intake really should be spread out throughout the day, not just in one meal.
Enter: protein waffles! Super easy to make, and I always have the ingredients on hand. I have this waffle iron from Breville, and it’s great because they come out as a ‘flower’ and you can then pull them apart into love hearts. Kids love the shapes!
I use the @nutraorganics kid-friendly Thriving Protein in Chocolate for my kids. There are other options out there, but I would always opt for a kid-friendly version for the kids where you can.
INGREDIENTS
– 2 eggs
– 1 cup almond milk
– 2 tsp baking powder
– 1 tbsp maple syrup
– 3/4 cup buckwheat flour
– 1-2 tbsp chocolate protein powder
Method
- Add all ingeients to a bowl and whisk together, or if you’re lazy like me you can quickly blitz in the blender.
- Lightly coat the waffle iron in olive oil and cook each waffle.
- Serve to the kids!
